Fully Loaded Chicken-Style Country Pie with Pomegranate & Quinoa Salad

Pair it with a vegan mash or a bright and fresh sad for a lighter substitute.

  • 1 Fry’s Fully Loaded Chicken Style Country Pie (or other vegan alternatives)
  • 1/3 cup red quinoa
  • 1/3 cup couscous
  • 1/3 cup peas
  • 1 -2 tbsp pomegranate seeds
  • A small handful of basil, roughly chopped (or other herbs, like parsley and mint)
  • Juice from 1 lemon

Instructions

  1. Cook the quinoa, couscous and peas, following pack instructions. Drain well and spread over a platter or wide, shallow bowl to cool quickly.
  2. When the quinoa, couscous and peas are cool, stir through all of the remaining ingredients with plenty of seasoning.
  3. Heat up the Pie so that it is warmed through. Serve the salad with the pie and enjoy.
