Fully Loaded Chicken-Style Country Pie with Pomegranate & Quinoa Salad
Pair it with a vegan mash or a bright and fresh sad for a lighter substitute.
Serves 2 Total Time 30 mins
- 1 Fry’s Fully Loaded Chicken Style Country Pie (or other vegan alternatives)
- 1/3 cup red quinoa
- 1/3 cup couscous
- 1/3 cup peas
- 1 -2 tbsp pomegranate seeds
- A small handful of basil, roughly chopped (or other herbs, like parsley and mint)
- Juice from 1 lemon
- Cook the quinoa, couscous and peas, following pack instructions. Drain well and spread over a platter or wide, shallow bowl to cool quickly.
- When the quinoa, couscous and peas are cool, stir through all of the remaining ingredients with plenty of seasoning.
- Heat up the Pie so that it is warmed through. Serve the salad with the pie and enjoy.
