Ginger Mint Cooler
Enjoy this easy and refreshing fizz with a zingy hit.
Serves 8
Ingredients
- 1L ginger beer
- small handful of mint
- 4 limes, 3 juiced and 1 sliced
- ice
Instructions
- Mix the ginger beer, the juice of 3 limes and 4 sprigs worth of muddled mint with lots of ice.
- Garnish with slices of lime and serve.

Tropical Punch
This exotic combination will make you feel like you’re further away from home than the end of your garden.
Ingredients
- 250ml mango juice
- 250ml pineapple juice
- 150ml pomegranate juice
- 500ml tonic water
- 4 tbsp fresh lime juice
- ice
- small handful of mint
Serves 8
Instructions
- Combine the mango juice, pineapple juice, pomegranate juice and tonic water with lime juice in a jug filled with ice.
- Garnish with a couple of sprigs of mint and serve.

Sipsmith Summer Cup
From artisan distillery Sipsmith, this London Dry Gin blended with lemon verbena and cucumber is made for sipping in the sunshine.
Ingredients
- Sipsmith Summer Cup
- lemonade
- ice
- cucumber, sliced
Serves 8
Instructions
- Mix 1 part Sipsmith Summer Cup with 3 parts lemonade and serve over ice with seasonal fruits.
The George Staunton Cocktail
Tea-based cocktails are hot right now. This one is a fitting citrussy tribute to George Staunton: traveller, and the man who introduced the western world to the pleasures of drinking Earl Grey tea.
Serves 8
Ingredients
- 12 heaped tsp Staunton Earl Grey tea
- 2 handfuls of ice cubes
- 8 tbsp orange cordial
- 8 tbsp Cointreau
- oranges, lemons, limes, sliced to serve
Instructions
- Start by brewing the Staunton Earl Grey tea by putting 12 heaped tsp of tea into a teapot and infusing with boiling water. Leave to stand for 4 mins and strain into a jug, then place in the fridge.
- Once fully chilled, add the ice cubes, orange cordial and Cointreau, adjusting according to taste.
- Stir well and garnish with slices of orange, lemon and lime. Serve in hi-ball glasses.
