
Lisa Faulkner’s Halloumi Salad Wraps with Tahini Dressing

Lisa’s come up trumps with these simple yet satisfying halloumi wraps. They’re full of tasty ingredients all the family will love – even the picky eaters (we’re looking at you, kids). Plus, it’s the perfect way to celebrate Veg Power: the campaign that aims to get more kids eating their greens (we’re proud supporters). In honour of their ‘in season veg of the week’, Lisa’s made sure her wraps have a helping of rosy, zingy radishes – enjoy.

For the wraps:
- 1 packet of Ocado halloumi *Lisa loves*
- 1 baby gem lettuce
- 1 handful of Ocado radishes, thinly sliced
- 1 handful of cherry tomatoes
- 1/2 cucumber, sliced
- 4 Ocado tortilla wraps
For the dressing:
- 1-2 large tbsp tahini
- 1-2 tbsp water
- Juice of 1 lemon
- 1 small clove of garlic, grated
- Salt and pepper to season
Instructions
1. Slice the halloumi and place on a griddle or frying pan, over a medium-high heat. Turn when golden.
2. Mix together the radishes, cucumber and tomatoes.
3. Warm the wraps in a microwave for 30 seconds, spread with a little of the dressing then layer a couple of lettuce leaves on each wrap. Top with the grilled halloumi and vegetables. Fold or roll, then eat right away.
For the dressing:
1. Place the tahini in a bowl with the water, and stir until it turns into a grainy paste. Add the lemon juice, grated garlic and salt and pepper. Mix well.
