Hot Cross Bun French Toast Recipe

Serves 4 Total Time 15 mins
- 2 eggs
- 100ml milk
- 2 tbsp caster sugar
- ½ tsp cinnamon
- knob of butter
- 4 hot cross buns, halved
- 4 tbsp greek yoghurt
- 2 bananas
- 4 tbsp honey
- Crack your eggs into a bowl. Then add the milk, caster sugar and cinnamon. Beat with a fork until you have a totally combined mixture.
- Pop a knob of butter in a large frying pan and heat it over a medium-high heat. Dip the hot cross buns in the egg mixture, turning so that all sides are coated.
- Place the hot cross buns in the frying pan a few at a time, frying for 2 mins on each side until golden. Serve with a dollop of Greek yoghurt, chopped banana and a drizzle of honey.
Chef’s tip: This is a delicious way of reinvigorating your stale hot cross buns, and makes for a very good breakfast or dinner.
