Have a go at making these timeless recipes, for cinnamon balls and coconut pyramids, which have been enjoyed by Samatha & Gemma’s family over the generations. GEMMA’S GRANDMA’S CINNAMON BALLS
Makes 12 Time 20 mins
Ingredients
- 2 egg whites
- 100g caster sugar
- 200g ground almonds
- 1 tbsp cinnamon
Instructions
- Preheat the oven to 190°C and line a tray with baking paper. Beat the egg whites until you form stiff peaks.
- Fold in the sugar, ground almonds and cinnamon, and then roll the mixture into balls using wet hands.
- Place the balls onto the tray and bake for 20 mins.
- Remove from the oven, then dust with icing sugar when cool.
SAM’S GREAT GRANDMA’S COCONUT PYRAMIDS
Makes 12 Time 20 mins
Ingredients
- 2 eggs
- 100g caster sugar
- 200g desiccated coconut
Instructions
- Preheat the oven to 190°C. Then beat the eggs and sugar until creamy.
- Stir in the coconut, and then roll the mixture into balls using wet hands.
- Use a fork to create peaks forming each ball into a pyramid shape.
- Place the pyramids onto a lined baking tray and bake for 20 mins.
- Remove from the oven, then allow to cool.
Sam’s Great Grandma’s Tip: Add chocolate drops and bake in paper cases for something sweeter.
