Lisa Faulkner: Nanna’s veggie barley soup

Feel free to use any leftover veg you might have in the fridge, but use in the quantities listed below.

  • 2 tbsp olive oil
  • 1 onion, chopped 
  • 2 carrots, sliced
  • 2 small potatoes, diced
  • 2 celery sticks, chopped
  • 1 small courgette, diced
  • 1-2 tbsp white miso paste
  • 1 large tsp Marmite
  • 1.5L good vegetable stock
  • 50g barley 
  • Handful green beans, sliced 
  • 1⁄4 spring cabbage, sliced 
  • White pepper, to taste


  1. Put the oil in a heavy-based saucepan over a medium heat. Add the onion to soften. Add the carrots, potatoes, celery and courgette – fry for a few minutes.
  2. Add the miso paste and Marmite, combine, then pour in the stock. Bring to the boil and then turn the heat down to a simmer for a good 40 minutes.
  3. Add the barley, green beans and sliced cabbage and simmer for another 20 minutes. Season with white pepper to taste.
