
Lisa Faulkner: Nanna’s veggie barley soup

Feel free to use any leftover veg you might have in the fridge, but use in the quantities listed below.
Serves 4 Total Time 1hr 10 mins
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 small potatoes, diced
- 2 celery sticks, chopped
- 1 small courgette, diced
- 1-2 tbsp white miso paste
- 1 large tsp Marmite
- 1.5L good vegetable stock
- 50g barley
- Handful green beans, sliced
- 1⁄4 spring cabbage, sliced
- White pepper, to taste
Instructions
- Put the oil in a heavy-based saucepan over a medium heat. Add the onion to soften. Add the carrots, potatoes, celery and courgette – fry for a few minutes.
- Add the miso paste and Marmite, combine, then pour in the stock. Bring to the boil and then turn the heat down to a simmer for a good 40 minutes.
- Add the barley, green beans and sliced cabbage and simmer for another 20 minutes. Season with white pepper to taste.
