In season recipes: What to cook in March
Brighten up March mealtimes with these seasonal picks. We bid farewell to some winter favourites and embrace the fresh flavours of new-season produce – and the promise of spring blooms.
Oranges
Sweet and fragrant, citrus is still going strong. Look for fruits grown in southern Europe. Enjoy the juicy slices, then mix slivers of peel into a jar of sugar – you can use these to add a hit of orange to bakes, drinks and fruit salads.
Cauliflower
Sliced into hearty steaks, blitzed into cauli rice, roasted whole, smothered in cheese sauce, even used in a gluten-free pizza dough… the cauliflower is the chameleon of cruciferous veg.
Spinach
Incredibly versatile and nutritious, spinach is a superstar of the salad drawer. Serve as a side dish, sautéed or wilted, use raw in place of lettuce for an earthy salad, or cook down and mix into pasta dough.
Leeks
They may be related to onions, but leeks have a much sweeter taste. Use them in stews, soups and stocks to add depth of flavour, and don’t be afraid to place them centre stage, too. They’re glorious paired with cheese and in creamy sauces.
Purple sprouting broccoli
Having brought welcome cheer to our winter veg baskets, this tender-stemmed brassica is nearing the end of its peak season. Make the most of it while you can – try it steamed, with just a drizzle of extra virgin olive oil.
Passion fruit
Nothing beats passion fruit for adding exotic flair to your fruit bowl. But before scooping out the tangy pulp within, pay attention to the skin: the more wrinkled it gets, the sweeter the fruit will be.
