Blistered Padron Peppers

Serves 4 Total Time  5 mins

Ingredients

  • 300g padron style peppers
  • 2 tbsp olive oil
  • 1 pinch coarse sea salt

Instructions

  1. Heat the olive oil in a griddle pan or wok large enough to fit the peppers in a single layer (or cook in batches in a large saucepan).
  2. When hot, add the peppers and cook on one side for 1 min until blistered, turn over and continue cooking, stirring occasionally for a further 1-2 mins.
  3. Transfer onto paper towels to remove excess oil before plating up. Sprinkle with sea salt and serve immediately.

Chorizo in Red Wine

Serves 4 Total Time  10 mins

Ingredients

  • 250g cooking chorizo, chopped into 2cm rounds
  • 150ml red wine
  • 2 tbsp olive oil
  • ½ red onion, chopped
  • 2 cloves garlic, sliced
  • 1 tsp smoked paprika

Instructions

  1. Heat the olive oil in a frying pan on a medium heat, and fry the onion and garlic until softened.
  2. Add the chorizo and cook for 2-3 mins, then stir in the paprika and cook for a further 1 min.
  3. Add the wine and simmer until it has reduced to a thick, rich sauce. Serve with crusty bread.
