
BEEF BURGER WITH SMOKED CHEESE, GREEN CHILLI SALSA, PICKLES AND RED CABBAGE SLAW

A delicious balancing act of spicy, creamy, meaty, smokey and sour.
Serves 4 Takes 25 mins
Ingredients
• 4 quarter pounder beef burgers
• 4 slices oak smoked cheddar
• 4 sesame seed buns, halved
• 60g sliced gherkins
For the slaw:
• 1/4 red cabbage, finely sliced
• 1 red onion, finely sliced
• 1 tbsp mayonnaise
• Juice of 1/2 lime
For the salsa:
• 3 green chillies, deseeded and chopped
• 1 banana shallot, chopped
• 10g coriander, chopped
• Juice of 1/2 lime
Instructions
1.Add the salsa ingredients to a bowl, season and stir.
2. In another bowl, mix the slaw ingredients, adding the lime juice to taste.
3. Shape into 4 burgers and keep in the fridge until ready to cook.
4. Cook the burgers on a hot barbecue for 6 mins, turning every 2 mins. Then lay the slices of smoked cheese on top and cook for 2 mins with the lid on to melt the cheese.
5. Assemble in the bun, burger first, followed by gherkin, slaw and salsa.
