
Banana Chutney

Give this a chance; we’re confident you won’t regret it. Great in a ham sandwich and with roast meats, burgers and hotdogs.
Makes 1 large jar Takes 20 mins
Ingredients
- 2 tbsp rapeseed oil
- 1 onion, chopped.
- 2 garlic cloves, grated
- 1 tsp ground ginger
- 1/2 tsp turmeric
- 1/2 tsp ground allspice
- 1/2 tsp hot chilli powder
- 4 bananas, mashed
- 70g raisins
- 130ml cider vinegar
- 2 tbsp light brown sugar
- 1 tbsp dark soy sauce
- Pinch of salt
Instructions
1. Heat the oil in a pan and gently fry the onion until it softens – about 5 mins. Stir in the garlic and spices.
2. Add the bananas, raisins, vinegar, sugar, soy sauce and salt, then bring to the boil. Bubble gently for 15 mins – stir so it doesn’t catch, and add a dash of water if it feels like it is.
3. Transfer to a heat-proof jar and eat straight away or leave the flavours to mellow. It will keep well in the jar, in the fridge.
