Three 20-minute meals for busy foodies

We’ve all been there. It was one of those weeks, and you just want to kick back and relax over the weekend. Our three meal suggestions from Ocadolife magazine take just 20 minutes to make: perfect for an impressive but laid-back brunch, lunch or dinner.

Pappardelle with Cherry Tomatoes, Mint and Parmesan

Feeling fancy, but up against the clock? Pasta is your best friend. Here we’ve roasted some halved tomatoes with a little olive oil, salt, pepper and mint, and served them with wide, ribbon-like pappardelle pasta. Don’t forget cracked black pepper and plenty of parmesan to finish.

Mediterranean Vegetable Couscous with Saganaki

Saganaki cheese is the star of this dish, simply served hot with a couscous salad. Like a rich, slightly softer version of halloumi, saganaki is perfect for frying until crisp and golden on the outside and gooey on the inside. Serve it on a bed of couscous with sliced peppers and courgettes, chopped olives, a few fresh mint leaves and a sprinkling of pine nuts.

Mushroom, Bacon Brie and Spinach Savoury Pancakes

This savoury mushroom, bacon, brie and spinach pancake is so good, you’ll want breakfast for dinner. Season pancake batter with thyme leaves before cooking, and fill with sautéed spinach and mushrooms. Finally, pile on some hot crispy bacon rashers and slices of brie to melt over the top, plus a scattering of chopped spring onions. *Drools*


Feel free to add your own spin to these recipes – maybe you’d like to roast some peppers with the tomatoes to go with the pappardelle pasta, or swap the brie for a different type of cheese in the pancakes.
