You’ve made it to the end of the #vegweek challenge: well done, you! For our final veggie week recipe, here’s a hearty bean chilli packed full of flavour and goodness.
Vegetable Chilli with Rice
½ small chopped onion
¼ chopped green pepper
½ chopped celery stick
1 crushed garlic clove
2 tsp coconut oil
100g tinned tomatoes
1 tsp tomato puree
½ tsp chilli paste (or flakes or powder)
½ tin (200g) Biona organic black beans
150g basmati rice (or preferred rice)
A pinch of ground cumin
Grated Divo vegetarian parmesan
- Fry the onion, green pepper, celery and garlic in the oil in a non-stick heavy-based pan for about five minutes, until vegetables are tender.
- Add tomatoes, tomato puree, chilli paste, beans and cumin.
- Bring to the boil and simmer for ten minutes.
- Serve with cooked rice and grated parmesan.
